I know, what on earth am I doing cooking stew when it’s 106 outside? Well, it’s hard to find summer recipes for winter squash. And I like stew. This recipe is really simple, but I changed up a couple things. I used red onion instead of shallots. I browned the squash with the other veggies to add a little flavor. I added some delicious CSA carrots. And I used some fresh thyme I had on hand. It’s a good recipe, and it, like many stews, is even better the next day. Plus, popular with the under 2 set – bonus!
