Chicken, Red Grape, and Pesto Pizza

This is a super simple recipe from Cooking Light. I know, grocery store rotisserie chicken is not the most noble or slow food thing out there, but sometimes Mama needs a break. I did, however, use home made CSA pesto instead of store bought. It’s a basic pesto – basil, olive oil, garlic, pine nuts, Parmesan – but I used both my arugula and basil because they needed using up. The grapes make this recipe kind of special – a little sweetness, but it’s really subtle. Honestly, I made most of this thing from “prepared” food – a Boboli crust, a grocery store chicken, and fresh mozzarella also made at my local store, but it still tasted fresh and homemade. So there.
