Tuna Melts

Yes, more Emeril. Sue me. This is a great weeknight meal that is pescatarian , uses up some of my lovely yellow CSA tomatoes, and is a breeze to put together. Here is the original – I’ve changed it up just a little. And have I mentioned – the combination of Emeril and Martha is like a marriage made in cooking heaven. Simple, beautiful, delicious.

  1. 1 can salt free water packed tuna, 1 can regular – drained
  2. 1/3 cup Lemonaise
  3. 1/4 cup finely chopped onion  – I use green or shallots
  4. 4 teaspoons capers, rinsed and drained
  5. 1 tablespoon  lemon juice
  6. ground pepper to taste
  7. chopped fresh herbs of choice – great with basil
  8. 3 thick slices sourdough bread
  9. 6 thin slices tomato
  10. 4 slices havarti cheese
Preheat broiler and line a baking sheet with foil.
Mix ingredients 1-7 until evenly distributed. Divide between three slices of bread. Top with tomatoes, then cheese. Put on sheet and broil until cheese melts, 3-4 minutes.
