Yes, more Emeril. Sue me. This is a great weeknight meal that is pescatarian , uses up some of my lovely yellow CSA tomatoes, and is a breeze to put together. Here is the original – I’ve changed it up just a little. And have I mentioned – the combination of Emeril and Martha is like a marriage made in cooking heaven. Simple, beautiful, delicious.
- 1 can salt free water packed tuna, 1 can regular – drained
- 1/3 cup Lemonaise
- 1/4 cup finely chopped onion – I use green or shallots
- 4 teaspoons capers, rinsed and drained
- 1 tablespoon lemon juice
- ground pepper to taste
- chopped fresh herbs of choice – great with basil
- 3 thick slices sourdough bread
- 6 thin slices tomato
- 4 slices havarti cheese
Preheat broiler and line a baking sheet with foil.
Mix ingredients 1-7 until evenly distributed. Divide between three slices of bread. Top with tomatoes, then cheese. Put on sheet and broil until cheese melts, 3-4 minutes.
I do love capers with tuna.
My husband LOVES tuna melts…and to be honest, now that I think of it, it has been a while since I made him one. Thanks for the reminder…
