Red Velvet Blackberry Pancakes

Doesn’t that sound spiffy? Okay, it was really just a big experiment, but it came out pretty good in the end. I took my standard pancake recipe, and added 2-3 tablespoons of cocoa powder and a cup of finely grated raw beets (I use a microplane grater). Check out this crazy looking batter:

After pouring each cake on the skillet I added some halved blackberries. These pancakes were a little stickier than usual, maybe from the sugar content of the beets? So extra butter on the skillet is a good idea.

I served them with fresh whipped cream with vanilla bean paste and brown sugar.

Bacon not optional.

If I really wanted to call these red velvet, I probably should have mixed some mascarpone or cream cheese into the whipped cream. I think next time I’ll add another tablespoon of cocoa powder to really chocolate it up. And maybe try raspberries. The pancakes themselves were really dang tasty. As Tiffany says, beets + chocolate = delicious.
